Ingredients
- 1 squid (about 300g)
- 1/2 onion
- 1/3 carrot

- Some sesame seeds
Seasoning Sauce
- 2 tbsp red pepper powder
- 1 tbsp red pepper paste
- 1 tbsp soy sauce

- 1 tbsp sugar
- 1 tbsp oligosaccharide
- 1 tbsp sesame oil
- A pinch of black pepper
Instructions
1. Prepare the Squid
- Clean the squid thoroughly and remove the internal organs.
- Score the inner side of the body to help absorb the seasoning and enhance the texture.
- Cut the squid into bite-sized strips, and slice the tentacles into 4-5cm pieces.
- Blanch the squid in boiling water briefly to remove any fishy smell. Adding a pinch of salt while blanching helps enhance the taste.
2. Prepare the Vegetables
- Slice the onion into thin strips and cut the carrot into thin slices.
- Cut the green onion diagonally, and slice the chili peppers if using.
- Rinse the perilla leaves and tear them into bite-sized pieces.
3. Make the Seasoning Sauce
- In a small bowl, mix together red pepper powder, red pepper paste, soy sauce, minced garlic, sugar, oligosaccharide, sesame oil, and black pepper.

4. Stir-Fry
- Heat 1 tbsp of cooking oil in a pan over medium heat and sauté the green onion and minced garlic until fragrant.

- Pour in the prepared seasoning sauce and mix quickly.
- Once the sauce is well-coated, add the onion, carrot, and chili peppers, and stir-fry for another 2-3 minutes.
