Ingredients

  • 1 squid (about 300g)
  • 1/2 onion
  • 1/3 carrot

  • 1 tbsp cooking oil
  • Some sesame seeds

Seasoning Sauce

  • 2 tbsp red pepper powder
  • 1 tbsp red pepper paste

  • 1 tbsp sugar
  • 1 tbsp oligosaccharide
  • 1 tbsp sesame oil
  • A pinch of black pepper

Instructions

1. Prepare the Squid

  • Clean the squid thoroughly and remove the internal organs.
  • Score the inner side of the body to help absorb the seasoning and enhance the texture.
  • Cut the squid into bite-sized strips, and slice the tentacles into 4-5cm pieces.
  • Blanch the squid in boiling water briefly to remove any fishy smell. Adding a pinch of salt while blanching helps enhance the taste.

2. Prepare the Vegetables

  • Slice the onion into thin strips and cut the carrot into thin slices.
  • Cut the green onion diagonally, and slice the chili peppers if using.
  • Rinse the perilla leaves and tear them into bite-sized pieces.

3. Make the Seasoning Sauce

  • In a small bowl, mix together red pepper powder, red pepper paste, soy sauce, minced garlic, sugar, oligosaccharide, sesame oil, and black pepper.

4. Stir-Fry

  • Heat 1 tbsp of cooking oil in a pan over medium heat and sauté the green onion and minced garlic until fragrant.
