Spicy Stir-Fried Jinmichae (Korean Dried Squid) Recipe
Jinmichae-bokkeum (Spicy Stir-Fried Dried Squid) is a simple yet delicious side dish that pairs perfectly with rice. The chewy texture of dried squid combined with a sweet, savory, and slightly spicy sauce makes it an irresistible addition to any meal. Let’s make this easy and flavorful dish at home!
Ingredients (Serves 2-3)
- 200g dried squid (Jinmichae)
- 1.5 tbsp gochujang (Korean red chili paste)
- 1 tbsp soy sauce
- 2 tbsp corn syrup (or honey)
- 1 tbsp sugar
- 1 tsp minced garlic
- 1 tbsp sesame oil
- A sprinkle of sesame seeds
- 1 tbsp mayonnaise (for a softer texture)
- 1 tbsp cooking oil
Cooking Steps
1. Prepare the Jinmichae
Cut the dried squid into bite-sized pieces (about 10-15 cm long). Rinse lightly under running water and squeeze out excess moisture. For a softer texture, soak in milk for 5-10 minutes before rinsing.
2. Make the Sauce
In a mixing bowl, combine gochujang, soy sauce, corn syrup, sugar, minced garlic, and sesame oil. Stir well to create a smooth sauce.
3. Cook the Sauce
Heat a pan over low heat and add cooking oil. Pour in the sauce mixture and stir-fry for 1-2 minutes until it starts to bubble. Be careful not to overcook the sauce.
4. Stir-Fry with Jinmichae
Turn off the heat and add the dried squid to the pan. Quickly toss and mix to evenly coat the squid with the sauce. Cooking over heat will make the squid tough, so mix with residual heat only.
5. Final Touch
Add mayonnaise for extra softness and mix again. Sprinkle sesame seeds on top to finish.
Tips for the Best Jinmichae-Bokkeum
- Avoid overcooking! The squid can become tough if heated too long. Mix it in after turning off the heat.
- Adjust sweetness by adding more or less corn syrup or sugar based on your taste.
- Spice it up by adding some red pepper flakes or sliced chili peppers for an extra kick.
This Spicy Stir-Fried Jinmichae is an addictive side dish that can be enjoyed with warm rice or even as a snack. Try making it today! 😊
