Jinmichae-bokkeum (Spicy Stir-Fried Dried Squid) is a simple yet delicious side dish that pairs perfectly with rice. Ingredients (Serves 2-3)

  • 200g dried squid (Jinmichae)
  • 1.5 tbsp gochujang (Korean red chili paste)

  • 1 tsp minced garlic
  • 1 tbsp sesame oil
  • A sprinkle of sesame seeds
  • 1 tbsp mayonnaise (for a softer texture)
  • 1 tbsp cooking oil

Cooking Steps

1. Prepare the Jinmichae

Cut the dried squid into bite-sized pieces (about 10-15 cm long). Rinse lightly under running water and squeeze out excess moisture. For a softer texture, soak in milk for 5-10 minutes before rinsing.

2. Make the Sauce

In a mixing bowl, combine gochujang, soy sauce, corn syrup, sugar, minced garlic, and sesame oil. Stir well to create a smooth sauce.

3. Cook the Sauce

Heat a pan over low heat and add cooking oil. Pour in the sauce mixture and stir-fry for 1-2 minutes until it starts to bubble. Be careful not to overcook the sauce.

4. Stir-Fry with Jinmichae

Turn off the heat and add the dried squid to the pan. Quickly toss and mix to evenly coat the squid with the sauce. Cooking over heat will make the squid tough, so mix with residual heat only.

5. Final Touch

Add mayonnaise for extra softness and mix again. Sprinkle sesame seeds on top to finish.

  • Avoid overcooking! The squid can become tough if heated too long. Mix it in after turning off the heat.
  • Adjust sweetness by adding more or less corn syrup or sugar based on your taste.
