Matcha Crème Brûlée Recipe
A perfect combination of rich cream and slightly bitter matcha, matcha crème brûlée is an elegant dessert with a crisp caramelized top and a smooth, creamy custard underneath. With just a few simple ingredients, you can create this luxurious treat at home. Let’s get started!
Ingredients (Serves 4)
- 4 egg yolks
- 400ml heavy cream
- 100ml milk
- 70g sugar (+ 4 tbsp for caramelizing)
- 2 tsp matcha powder
- 1 tsp vanilla extract
Instructions
1. Preheat the Oven and Prepare the Ramekins
Preheat the oven to 150°C (300°F). Place four ramekins on a baking tray and set aside.
2. Make the Cream Mixture
In a saucepan, heat the heavy cream and milk over medium-low heat until it begins to steam (do not boil). Add the vanilla extract and matcha powder, whisking thoroughly to dissolve the matcha evenly.
3. Mix the Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and sugar until smooth. Slowly pour in the warm cream mixture while whisking continuously to prevent the eggs from curdling.
4. Pour into Ramekins and Bake
Strain the custard mixture through a fine sieve into the ramekins. Fill the baking tray with hot water until it reaches halfway up the ramekins. Bake at 150°C (300°F) for about 30-35 minutes or until the custard is set but slightly jiggly in the center. Let cool, then refrigerate for at least 2 hours.
5. Caramelizing and Finishing
Sprinkle 1 tbsp of sugar evenly over each custard. Use a kitchen torch to melt the sugar until it forms a crispy, golden-brown crust. If you don’t have a torch, use the oven’s broil setting to caramelize the sugar. Let the caramel harden before serving.
